Rosa Li founded Wildwonder to blend her love of local California produce with her grandma’s recipes for herbal brewed tonics. What is stevia?

An early calorie-free sweetener, stevia comes from the leafy Stevia rebaudiana plant. It’s far sweeter than sugar so a small quantity goes a long way. It can have a medicinal, anise-like aftertaste which can be muted in intensely flavored sodas like root beer

Family favorite: Fresh Fizz Sodas

Produced in New York State, Fresh Fizz sweetens its sodas with honey and, for its Date Cola, date syrup. What is monk fruit?

Derived from the luo han guo (monk fruit) plant native to Southern China, this extract can be up to 250 times as sweet as traditional sugar. It is also antioxidant rich, making it a go-to for wellness-branded sodas. Given its intensity, monk fruit extract can have a cloying aftertaste. 

Made for chill: Something & Nothing 

U.K.-based soda brand Something & Northing is the cool girl of the soda world. Their barely sweet Cucumber, Yuzu, and Hibiscus & Rose sodas having calming herbal notes and are made for carefree sipping over ice. What is erythritol?

Erythritol is a low-calorie sugar substitute derived from fermented corn used in products like Splenda.
